Mutton Qorma

Ingredients:

For Marination:

·         1 kg mutton, cut into pieces

·         1 cup yogurt

·         1 tablespoon ginger paste

·         1 tablespoon garlic paste

·         1 teaspoon red chili powder

·         1 teaspoon turmeric powder

·         Salt to taste

 

For Qorma:

·         1/2 cup cooking oil or ghee

·         2 large onions, finely sliced

·         2 teaspoons ginger paste

·         2 teaspoons garlic paste

·         1 teaspoon cumin seeds

·         1 teaspoon coriander powder

·         1/2 teaspoon black cardamom powder

·         1/2 teaspoon green cardamom powder

·         1/2 teaspoon cinnamon powder

·         1/2 teaspoon cloves powder

·         1/2 teaspoon black pepper powder

·         1 cup water

·         Fresh coriander leaves and ginger slices for garnish

Procedure:

1. Marination:

o   In a large bowl, mix together yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, and salt.

o   Add the mutton pieces to the marinade, ensuring each piece is well-coated.

o   Cover the bowl and let it marinate for at least 2-3 hours, or overnight in the refrigerator for better results.

2. Cooking the Qorma:

o   Heat oil or ghee in a large, heavy-bottomed pot over medium heat.

o   Add sliced onions and fry until golden brown.

o   Add ginger paste and garlic paste, and sauté until the raw smell disappears. d. Add cumin seeds and let them splutter.

o   Add the marinated mutton along with the marinade. Cook on medium-high heat until the mutton is browned.

o   Add coriander powder, black cardamom powder, green cardamom powder, cinnamon powder, cloves powder, and black pepper powder. Mix well.

o   Cook for a few minutes until the spices are well incorporated.

o   Pour in water, cover the pot, and simmer on low heat until the mutton is tender and the oil separates from the masala. This may take 1.5 to 2 hours, depending on the meat's tenderness.

o   Check the seasoning and adjust salt and spices if needed.

3. Garnish and Serve:

a. Once the mutton is cooked and the qorma has a rich, thick consistency, garnish with fresh coriander leaves and ginger slices.

b. Serve hot with naan, roti, or steamed rice.
